Mango and Passion Fruit Fool

If you are looking for a somewhat healthy dessert recipe that is light and easy to make, this modified mango and passion fruit fool will do all of the above while still satisfying your sweet tooth. This healthy and light dessert recipe can easily be made in advance, and replaces a good bit of the traditionally required cream with natural yoghurt, which you can get in low-fat and fat-free varieties.

Mango and Passion Fruit Fool

Ingredients:

Serves 4

2 mangoes, peeled stoned and diced
4 passion fruit, halved and pulp scooped up
2 tbsp icing sugar
350ml natural yoghurt
100ml double cream
1 tbsp chopped nuts such as almonds, pistachios or macadamias (optional)

Direction:

Place the mango and passion fruit in a bowl with 1 tbsp of the icing sugar and the yoghurt and mix well.

In another bowl, whip the cream with the other tbsp of icing sugar until you have soft peaks.

Fold the whipped cream gently in to the yoghurt and fruit mix, then spoon in to dishes or glasses and allow to chill in the fridge for a couple of hours. Sprinkle with the chopped nuts before serving if using.

    Mmmmmmmmmm, love both mango and passion fruit — usually their juices but the ‘fool’ sounds good too! :)
